I have been bottle feeding my lamb but I noticed over the last day or so she is having a hard time having a bowel movement. Can I give her the colostrum for a day or two until she starts going again?

I wouldn't do that. I suggest that you try and wipe the anus area with some warm water to try and stimulate a movement. You may also have to give your lamb a soapy enema.

When giving your bottled lamb its milk add a teaspoon of molasses or dark sugar to the bottle until normal movements are achieved.

If in doubt, call the vet.
