Economical Ground Turkey Recipes in a Hurry

If you are looking for quick and easy recipes to make, then these ground turkey recipes are just the thing. Ideal for ideas for leftovers as well as making meals for the family during the week when time isn't always on your side.

Ground Turkey Rissoles

1/2 pound finely-ground turkey
3 oz. breadcrumbs
2 eggs, beaten
1 tablespoon parsley, finely chopped
1 teaspoon lemon juice
enough white sauce to moisten the mixture
salt and pepper to taste
1 oz. butter
1 oz. flour

Mix the minced turkey, the breadcrumbs, chopped parsley, lemon juice, salt and pepper together. Mix well and moisten it with the well-beaten eggs and a very little white sauce. Make into small, flat cakes, dust with a little flour. Put the butter into the frying pan and fry over a low heat until the turkey rissoles
are a golden-brown on both sides. Serve hot.

Ground Turkey and Pineapple Bake

2 cups ground turkey
1 cup ground pork
3/4 cups soft breadcrumbs
1 small onion, grated
1/2 teaspoon thyme
1/2 teaspoon marjoram
1/2 teaspoon grated lemon rind
2 grated hard-boiled eggs
1/2 cup pineapple juice
salt and pepper to taste
1 can shredded pineapple
extra breadcrumbs

Mix together all the ingredients and turn into a well-greased pie dish, spread the top with 2 heaped cups of canned shredded pineapple. Sprinkle with extra breadcrumbs. Dot with small pieces of butter and bake in a moderate oven 350 degrees F. (180 degrees C.) for 30 minutes.

Ground Turkey Fritters

2 egg yolks, beaten
1 cup flour
1 tablespoon melted butter
1/2 teaspoon salt
1 cup cold water
whites of 2 eggs, stiffly beaten
1 cup ground turkey
oil for frying

Beat the eggs together and add the flour. Mix well. Add the melted butter and the salt. Add the cold water and fold in the 2 stiffly beaten egg whites. Gently mix through the ground turkey. Fry spoonfuls into, deep hot oil. Cook until brown and drain on kitchen paper towels.

Ground Turkey Meat Loaf

2 cups ground turkey
1 cup cooked rice
1 cup soft breadcrumbs
1/2 cup walnuts, chopped or 1/2 cup chopped celery
2 tablespoons grated cheddar cheese
2 tablespoons finely chopped onion
1 tablespoon finely chopped parsley
1/2 teaspoon mustard
1 egg, beaten
2 oz. melted butter
salt and pepper to taste
extra cheese, grated

Mix together all the ingredients. Place in a well greased loaf tin and top with more grated cheese. Bake in a moderate oven until cooked.

Ground Turkey and Bacon Burgers

1 lb ground turkey
4 bacon rashers, cubed
7 oz breadcrumbs
1 egg, beaten
1 teaspoon Worcestershire Sauce
1/2 teaspoon garlic salt
pepper

Mix all the ingredients together. Make into burger patties. Place in the fridge to firm up before cooking. Fry in a little oil over a low heat until cooked through.
