Sweet Rice Pudding- school style

Hello Ladies.... I too remember the sweet rice we were served in the cafeteria...I have made this for my kids while growing up and they loved it too.

1 and 1/2 cups cooked white rice
2 cups milk
2/3 c sugar
2 t vanilla
2 T butter
3 T cornstarch
Cinnamon if desired

Bring the milk to a simmer with the cooked rice. Add sugar.

Stir cornstarch with 3T water and add when the milk comes to a simmer.

Stir constantly when you add the cornstarch mixture until thickened.

Remove from heat and stir in vanilla and butter.

Sprinkle top of rice with cinnamon if desired.
