Homemade Veggie Chowder

This is an easy, delicious, healthy soup I came up with one day.

4 organic carrots chopped
3 organic celery chopped
5 potatoes chopped
1 can of corn
1 small bag organic baby spinach
1 white onion chopped
1 box of chicken stock
two table spoons butter
3 tablespoons flour
4 tablespoons milk

Place the cut up veggies in a large pot with chicken stock and cook until veggies become soft.
Add salt, pepper, oregano, onion powder, garlic powder, basil for flavor.

Before the veggies are almost done start making a roux in a skillet by placing 2 tablespoon butter in skillet. Let the butter melt and add 3 table spoons flour. Mix the flour and butter until it becomes doughy. Add the milk to the flour and butter. Place the doughy mixture in with the vegetable and stir. Serves 3-4

(this is a recipe I just threw together one day so one can add more roux mixture to make it thicker. Cream can also be added to make it creamy. Other spices and vegetables are also encouraged!)
