Sweet Rice Pudding- school style

Hello Ladies.... I too remember the sweet rice we were served in the cafeteria...I have made this for my kids while growing up and they loved it too.

1 and 1/2 cups cooked white rice
2 cups milk
2/3 c sugar
2 t vanilla
2 T butter
3 T cornstarch
Cinnamon if desired

Bring the milk to a simmer with the cooked rice. Add sugar.

Stir cornstarch with 3T water and add when the milk comes to a simmer.

Stir constantly when you add the cornstarch mixture until thickened.

Remove from heat and stir in vanilla and butter.

Sprinkle top of rice with cinnamon if desired.

This is the only recipe you need for rice pudding

My grown son has been asking me to make him some rice pudding just like they used to serve him in grade school for years. I have tried recipe after recipe and never got it right, until now. Thank you so much for posting this wonderful simple recipe. It really is the best rice pudding recipe ever. I finally have a very happy son.
