Compote of Dried Fruit

Compote of dried fruit is a perfect recipe to make for a healthy breakfast. If you are making this for children you can omit the sherry and use apple juice instead.

Try and buy organic dried fruit that hasn't been treated with preservatives for a truly healthy breakfast.

You can serve it either with a spoonful of honey, or plain yogurt, or both!

250 g dried fruit (apples, prunes, pears, peaches etc.)
500 ml water
1 stick cinnamon
100 g castor sugar
100 ml sherry

Place fruit, water, cinnamon and sugar in a covered dish. Leave to soak overnight. Stir in sherry.

Microwave covered at 70% power until the fruit is soft, 15-20 minutes. If you don't have a microwave you can cook the compote on top of the stove in a saucepan. Cook over a low heat, stirring occasionally, making sure that it doesn't burn.

Serve cold with fresh Greek-style yogurt or cream.
