Microwave Marmite Cake

Microwave Marmite Cake

by Tessa King
(North Riding, South Africa)

This is my recipe for a microwave marmite cake.

175 ml Castor Sugar
2 Eggs
100 ml Milk
20 ml Margarine
250 ml Self-Raising Flour
Pinch Salt

Sauce: 50 ml Margarine
50 ml Marmite (small bottle)
200 ml Grated cheese

Beat eggs & sugar together. Heat milk & margarine on 100% power +- 1 minute. Sift flour & salt together & add to egg. Mix together with milk & margarine. Mix well. Prepare ring mould & pour in mixture. (I use a Tupperware Jel ring). Place a piece of paper towel over the top and microwave 70% power for 5-6 minutes in an 800w oven. Adjust times to suit the power of your microwave. Do not overcook as it keeps on cooking for a while after removing from the oven. Cool in mould before turning out.

Heat margarine & marmite on 100% power +- 1 minute (1/2 min) & spoon over cake. Sprinkle with grated cheese.

Vegemite Microwave Cake
by: Tessa

If the Vegemite is too strong then use much less or water it down slightly. Never had to do that so am not sure how to make it less strong. Usually there is really only a lot on top of the cake as the rest runs down the sides leaving quite a bit of cake free of marmite or vegemite. Glad you enjoyed it. My kids love it and when they come for a visit it's always the favourite request.

The Marmite Cake was Great!

Was a great cake, we used vegemite instead of marmite though, so it was very very strong. But the cake was brilliant. (:

Marmite vs Vegemite
by: Tessa

I am in Perth at present visiting my sister and heard on the TV tonight that for the first time in 85 years the recipe for Vegemite has been changed. Didn't hear it all so am not sure what ingredient has changed but I think it was something that was added or a new variation of Vegemite. In 1991 I had my first taste of it here in Perth. We were brought up on Marmite as kids in SA.

English Marmite
by: Tessa

Hi Kathryn

English Marmite (take it that is the same as what we use here in SA!) Vegemite is the Australian version.

English Marmite or Australian Marmite?
by: Anonymous

Dear Tess

Many thanks for your marmite cake recipe which I know our readers will love to try. Just a thought, I take it you are using English marmite, and not Australian marmite. To my fellow Australian friends we will beg to differ over the virtues of Australian marmite. English marmite is by far the best! :)

Kathy
