Pineapple Delight Pudding with Ideal Milk.

Pineapple Delight, also known as Pineapple Fluff is a quick and easy recipe to feed hungry hordes, and is liked by both adults and children alike - even those who are not always fond of pineapple!

Before you make this dessert place the Evaporate Milk in your fridge overnight as it has to be well chilled before using it.

You can easily double the quantities of this recipe.

1 Tin Evaporated Milk
1 Packet Pineapple Jelly
1 Tin Pineapple Chunks

Make the jelly using 1 cup of the pineapple juice (no water). Dissolve and leave to cool.

Beat up the Evaporated Milk which should be well chilled until it is thick and creamy and forming peaks.

Fold in the cooled Jelly mixture and add the pineapple chunks.

Decorate with some chocolate flakes if you so wish.

Measurements for your Recipes

As an ex-pat living in the US, I find South African recipes very frustrating. e.g. "1 tin of pineapple chunks". We get them in 3 sizes! Which is the right one? Jelly comes in 2 different sized boxes. Sigh....

A tin of evaporated milk in South Africa is 380g which means that there are just over 12 fluid ounces in the can.

The jelly that is used is the smaller packet at 90 grams, which is a 3 oz, but you can still use the 96 g/ 3.4 oz packet that the jello comes in, with no problem at all.

In fact, when I make this recipe, I usually double up on the jello adding 2 packets instead of the 1 mentioned here in the recipe.
