Tomato Pie Recipe

My husband has spoken of a tomato pie recipe his grandfather used to make. Grandpa died in 1962 and I have never heard of a tomato pie using ripe tomatoes before. Does anyone know of this pie?
My husband's family is from Georgia.

Mildred, not sure which tomato pie recipe you are after, as you didn't mention any ingredients. However, there are a couple of recipes here for you. Hopefully, one of them is the pie recipe you are after.

Tomato Pie Recipe 1

Slice up some ripe tomatoes and place them in a greased pie dish. Sprinkle with chopped parsley, salt and pepper. Cover with some seasoned mashed potatoes moistened with a little milk, and bake the pie in a moderately hot oven until the top is lightly browned.

Tomato and Corn Pie

Take 1 pint stewed tomatoes, 1 tine sweetcorn, 1 tablespoon butter, 1 tablespoon breadcrumbs, 1/4 lb grated cheese.

First put a layer of corn in a buttered baking dish. Then layer with slices of ripe tomatoes. Sprinkle with grated cheese and repeat layers. Finally, sprinkle with crumbs, dot with butter and bake for half an hour in a moderate oven.

Tomato and Apple Pie Recipe

Butter a pie dish. Mix 1 cup peeled tomatoes, 1 cup peeled and chopped apples, half a cup grated or chopped onion, flavor with salt and pepper. Press into dish. Cover with knobs of butter, and sprinkle with dry bread crumbs. Bake for 45 - 60 minutes in a moderate oven until crumb topping is crisp.

Egg and Tomato Pie Recipe

Skin and slice some ripe tomatoes to fill a greased pie dish. Sprinkle with salt and pepper and a little sugar. Add a well beaten egg and half a pint of full cream milk or cream. When the pie dish is fully, put a layer of puff pastry over the top of it and bake in a hot oven until the pastry is puffy and golden.

Rice and Tomato Pie Recipe

Grease a pie dish and layer alternatively with cooked rice and sliced tomatoes. Season well with salt and pepper and a sprinkling of minced onions or green onions. Pour over it either a puree of tomato or an egg beaten with a small cup of milk. Bake until a pale brown.

Instead of rice, you can use breadcrumbs, and in place of the puree you can use any leftover white or cheese sauce.
